Cooking classes on Lake Maggiore- Dessert: chocolate salami

Chocolate Salami

I’ve been making this dessert since I was 6 years old, when my mum gave me as a gift  The Cookbook of Grandma Duck, and every time I prepare it, it brings back memories of my childhood.
It’s really easy to prepare and it’s also one of those dishes you will enjoy making also with your children.

Ingredients

  • 2 egg yolks
  • 2 Tbsp. sugar
  • 2 Tbsp. unsweetened cocoa
  • 1 Tbsp. Rum or milk
  • 3/4 cup butter 150 g
  • 7 oz. or 200 dry tea biscuits like graham cracker
  • 1 Pinch salt

Instructions

  • Separate the egg whites from the yolks and put the yolks in a saucepan; beat them with the sugar, by hands,  until you have a smooth and a creamy consistency.
  • Melt the butter,  being careful not to cook it.
  • Add the butter to the egg mixture and combine well.
  • Slowly add the cocoa and the liquor or milk until well incorporated.
  • Break the biscuits in little pieces using a rolling pin or a bottle.
  • Stir the biscuits into the cream mixture using a wooden spoon until perfectly mixed.
  • Place the mixture over a piece of tinfoil and shape it like a salami.
  • Wrap it on both sides and refrigerate until hard.
  • Present it on a serving dish and slice it just as you would with salami.

Notes

*If you are worried about the health risks from eating uncooked eggs,  I suggest that you ask your grocer for pasteurized eggs. I know that in the U.S. you can purchase them in a carton.
