Roasted Peaches with Vanilla Ice Cream

  • 4 fresh ripe peaches cut in half, pits removed
  • 2 Tbsp brown sugar
  • 1 Tbsp butter
  • 4 Digestive biscuit crumbled
  • Vanilla ice cream


  • Preheat the oven to 180 degrees C.
  • Place the peaches cut-side up in a baking dish. Fill each peach cavity with a bit of butter, brown sugar and the biscuits crumbled.
  • Bake 35 to 40 minutes, until the flesh has softened and the tops are browned.
  • Serve warm, with ice cream.
